Several years ago, I happened upon a crazy delicious meal at an Italian restaurant- Italian nachos. I am a nacho-lover anyway, ballpark-variety-gooey-cheese-included, but these were a whole new level. Crispy pasta chips, Italian sausage, chicken, olives, some kind of creamy sauce… I’m getting hungry thinking about it and it’s 6 a.m.! The nachos were SO good but definitely not good for you.
Since we are on a quest for eating healthier, I decided to re-create this meal in a salad form. Salads with meat are such a great way to make a filling meal quickly, so I’m always on the hunt for a new grilled chicken salad recipe!
I was a little at a loss about how to recreate the pasta chip element of the Italian nachos, but found Parmesan-herb pita chips. They were a perfect stand-in!
This Italian grilled chicken salad recipe incorporates lots of olives, cheese, and pepperocini peppers. We’re huge olive fans around here so I’m always disappointed when a salad at a restaurant has 1 or 2. Since I’m in control here, I added a ton!
The best part of this salad? It contains protein, healthy fats, and veggies- and literally takes about 10 minutes to assemble thanks to Tyson® Grilled and Ready chicken strips. I made a very easy dressing first- just Wish-Bone® Italian Dressing plus a bit of homemade mayo. Then I popped the chicken strips in the skillet for about 5 minutes to prepare them- they’re already full cooked- then threw everything else into a bowl and we’re good to go. My husband loves salads as much as I love nachos (no, seriously), so he was super excited to try this new recipe. He handed me back a (very large) empty bowl, so I think he liked it. 😉
I’m a fan of Wishbone Italian Dressing not only for its zesty, herb-packed flavor, but also because it contains no high-fructose corn syrup. That stuff sneaks into everything, and it’s refreshing to find a dressing that doesn’t contain it.
My wheels are already spinning about new salads to create! What’s your favorite salad?
- 6-8 cups salad greens
- 6-8 strips Tyson Grilled and Ready chicken
- ¼ cup shredded Parmesan or Parmesan-Romano cheese
- Pepperocini peppers
- 10 Kalamata Olives
- 15 green olives
- pita chips
- Dressing: 4 Tbs. Wishbone Italian Dressing
- 1 Tbs. mayonnaise
- Mix dressing ingredients and set aside.
- Prepare chicken according to package directions.
- Place salad greens in a bowl, layer with other ingredients.
- Toss with dressing before serving
