Today is my grandfather’s birthday. He would have been 84 today. We lost him in March after he was diagnosed with cancer only about 10 weeks earlier. I miss him so much, so wanted to make something in his honor.
He loved, loved sweets. Grandma (whom we also lost this year) always had a cake or cookies around for him. He also loved buttermilk. That is a craving I truly cannot understand! But it was one of his favorites, and I cannot look at buttermilk without thinking of him. It was one of the last things he had before passing away.
So I decided to combine the two- sweets and buttermilk (since I can’t stomach it on its own!) and made a buttermilk pie. It’s the same one I made for my husband’s 35th surprise dessert party a few years ago.
The best part of this dessert- it’s super easy! (Especially if you remember to thaw out the pie crust before you make it! I ended up making one which will be better, but adds time.)
First, gather your ingredients:
3 eggs
1 1/3 cup sugar
1 stick butter, melted
1/4 cup flour
3/4 cup buttermilk
1 tsp. vanilla
Heat oven to 325. Beat eggs. I used a stand mixer, but you can definitely use a fork! Add butter, then sugar and flour. Mix until smooth. Add buttermilk and vanilla. Pour into unbaked pie crust (I used this recipe– excellent!) and bake at 325 for 45 minutes or until set.
Mmmm. This recipe is perfect if you need to take a dessert to a work party, family party, or just have a sweet craving but not much time! Hope you enjoy it!
