So I found a recipe a few weeks ago that really intrigued me- Fried Mashed Potatoes.

The recipe, however, called for leftover mashed potatoes, which is something I don’t normally have lying around. But what I did have lying around was a box of instant mashed potatoes! So I thought I would give it a try. I served them when I had some family over, and they were a hit. They were actually quite easy, too.
- 1 pkg instant mashed potatoes made according to directions on box (the box I used had two packets, just use one)
- 2/3 cup grated cheddar cheese
- 1 tsp. dried rosemary
- 1 cup panko breadcrumbs
- 2 eggs, beaten
- oil for frying
Stir in cheese and rosemary to mashed potatoes and let cool to room temperature. Shape into small balls, using about a tablespoon for each ball. Dip in egg, then roll in breadcrumbs to cover. Fry in hot oil until golden brown. Try not to eat the whole batch yourself. (This step is purely optional.)
I think next time I am going to add some goat cheese to the mix to make them really creamy. Mmmmmm.
