Y’all. How can this summer be almost over already? Two weeks from today, I’ll be sending all but one of my little ones to school- my 3rd will be in kindergarten! How did that happen?
My older 2 are going to a new school where they’ll be in class on their campus 2 days a week then home with me 3 days a week, completing their assignments here. We’ve done almost 100% homeschooling most of their years in school so this will be a change for us, but we’re all excited!
Since lots of change is coming soon in our family (we’ll be licensed to be foster parents in mid-September if all goes as planned), I’m upping my arsenal of quick, easy yet delicious meals.
This weekend, I created a pizza that will definitely be making it on our rotation! Chicken & Bacon pizza with fresh basil and balsamic drizzle- oh my! I could hardly finish photographing it because my hubby wanted it NOW! 🙂
The best part? This was on the table in less than 30 minutes, start to finish.
When I was at H-E-B last week, I picked up some Wright Brand® Bacon and Tyson® Better for You Lightly Breaded Chicken Strips. Wright Brand® Bacon (God bless Texas!) that we love! The smoked version was perfect for this pizza.
I loved that I could add high-quality protein to our pizza so easily. I’ve noticed a definite difference in my kids’ attention span when they’re getting enough protein- and with homeschooling, we NEED attention span!
While I was at H-E-B I also picked up a fresh pizza crust from their bakery. Oh, my. I’ll never buy another kind again. It was SO good!
I don’t really like traditional pizza sauce, so I used some really good canned tomatoes instead. [If only I’d made this pizza a few weeks ago I could have used fresh tomatoes from our garden.] The tomatoes I chose already had basil, garlic and oregano in them, but because #basilislife , I used basil from our herb garden. (I can grow that stuff like nobody’s business!)
The balsamic drizzle is optional, but not really. 😉 It definitely added a delicious layer of flavor. I can’t wait to make this pizza again- I’m thinking it will make a great first-day-of school dinner!
- One 16-inch pizza crust
- 6 slices Wright brand bacon, chopped
- 6 Tyson lightly breaded chicken strips
- one 12 oz can diced tomatoes with basil, oregano and garlic
- ½ teaspoon sea salt
- 8 oz mozzarella, cubed
- handful of fresh basil, chopped (8-10 large leaves)
- balsamic drizzle:
- 1 tsp. balsamic vinegar
- 2 Tbs. mayonaisse
- Preheat oven to 400 degrees.
- Cook chicken strips for 15 minutes, flipping over at the halfway mark.
- Pre-cook the pizza crust according to package directions if necessary.
- While the chicken is cooking, cook bacon on the stove. It doesn't have to get perfectly crisp because it will finish cooking in the oven. Drain bacon on a paper towel.
- Also while chicken is cooking, mix mayonnaise and balsamic vinegar in a squeeze bottle to create the drizzle sauce.
- Spread tomatoes evenly over the crust. Sprinkle with salt.
- Add bacon to crust; spread evenly.
- Cut chicken into small chunks and add to pizza.
- Add cheese evenly to pizza.
- Bake at 400 for 8-10 minutes, until cheese is melted and crust is beginning to turn golden brown.
- Sprinkle with chopped basil.
- Drizzle lightly with balsamic sauce.
