The Best Salad Recipe Ever!




You won't mind eating salad if it tastes this good! The best salad recipe ever!

It’s not often that I get excited about a salad. I mean, come on, when there’s cheese and chocolate and hors d’oeuvres to be had, salads just don’t get me in a tizzy, especially this time of year. But this salad- it’s SO good! We had it at our 10 year anniversary dinner and then I began making it at home. I think it’s the best salad recipe ever!
If you have a formal Christmas dinner, make it for a starter. And if you don’t have a formal Christmas dinner (my extended family is eating Mexican food for our celebration!) then make it as a meal at another time to make you feel better for all the cheese, chocolate, and hors d’oeuvres you’ve been eating since Thanksgiving!
 

For each serving you’re making, melt about 1/4 Tbs. butter and 1/2 Tbs. agave nectar or honey over medium heat. Add chopped walnuts or pecans and toast. Use about 2 Tbs. nuts for each salad.

Peel a pear, then use the vegetable peeler to shave off thin slices of pear. You’ll need about 6 slices for each salad.

Chop about 1 cup red leaf lettuce per salad.

Crumble about 2 Tbs. goat cheese per salad- this part is part of what makes the salad soooo good!
Use a good balsamic vinaigrette for the dressing. My friend Fabia brings a salad dressing mix to me each summer from Switzerland, and I used that mix with balsamic vinegar and olive oil. It is our favorite dressing ever!
Finally, assemble everything together and enjoy!
You don’t need much dressing because all of the ingredients are so good.
