Grilled Stuffed Jalapeños- Week two of the Recipe Roundup Link Party!

The veggie part is just a challenge for me to find more creative veggie dishes.

They all looked yummy, but my favorite goes to Sweet Mornings’ sweet potato soup
Apparently, I am in a sweet potato mood!

This week’s recipe isn’t new to me, but we are definitely not tired of it! I’m not sure that it counts as a vegetable since it uses copious amounts of cream cheese- but then a lot of my veggie dishes do use cream cheese! 
{what is cream cheese anyway? one of the world’s wonders!}
To make this tasty side dish (or appetizer):
Cut about 12 jalapeños in half and remove the seeds.
I do this using the tip of a vegetable peeler. This works quite well.

Spread about 1.5 Tbs. room temperature cream cheese into each half. (You can use reduced fat!)

Sprinkle liberally with seasoning salt, whatever you have on hand.

This is what I had on hand. 🙂

Cut six slices of bacon in half, then each half again lengthwise.


Tie a piece of bacon around each jalapeño half. 
Make sure to knot it so it doesn’t slip off during cooking.
Yum!
Then, grill over medium heat until the bacon is crisp. Or you, can bake in a 400 degree oven for about 15 minutes, or until bacon is crisp.

Unfortunately, my pictures end here. Apparently I was so excited to start inhaling these babies that I forgot to snap a pic of the finished product. I took them to a Christmas party in December and brought home an empty plate. That is a good indication of their tastiness!

  8. Kelli, in your cream cheese cut up diced green onions and add bacon bits, the kind that are real not the crunchy kind.Then wrap bacon around it and secure with toothpicks, soo good you will slap your momma! Or not. I bake mine in the oven until bacon is done.
