Mmmm… I love breakfast food. Seriously. We often have breakfast for dinner, and we eat a hot breakfast at least five mornings a week. (sometimes thanks to my husband!) Homeschooling allows us a little more time in the mornings, but even if you can’t do a hot breakfast on weekday mornings, weekend breakfasts are fabulous! I’ve got nine yummy recipes here for those of you that love breakfast as well- and maybe even convert some of you non-breakfast lovers!

  1. My husband isn’t able to eat breakfast at home during the week so I make him breakfast burritos. I make scrambled eggs, cook up some ground sausage (bacon would work fine, but he prefers the sausage), microwave a potato (or use leftover french fries or mashed potatoes), grate some cheese, and warm up some toritillas – then I start rolling. I put a little sausage, egg, potato, and cheese on each tortilla, roll it up, then roll it in a piece of foil. I make 2-4 weeks worth at a time and put them in the freezer. Each morning, when I cook the 2 burritos for the day, I take out 2 for the next day and put them in the fridge so they are thawed for the next day. To heat them, I remove the foil, wrap them in a cloth napkin, then microwave for 45-60 seconds, then rewrap them in foil so he has a hot breakfast to eat on the drive to work.

    We are pastoring a small church in Hewitt/Waco and he likes to have a little something to eat before he preaches on Sunday morning, so I try to keep croissant breakfast sandwiches for that. I buy some store made croissants, make sausage patties, cook the eggs in as much of a circle shape as I can, and assemble the sandwiches with a slice of cheese as well. They also freeze well and warm up easily!

    • Hi Diana- we love breakfast burritos, too! What a great idea to make them ahead of time. I am going to have to try this.
      My hubby is also a pastor and he has to have some kind of protein on Sundays before preaching or he starts feeling weak. Those croissants sound yummy too! Thanks for stopping by!
