I mentioned in my recipe post about Lara Bars that I LOVE my food processor. I fell even more in love this weekend! It was just me and Evie around Saturday evening and I decided to try making one of her favorites in the food processor- peanut butter. (Secret: we were out of peanut butter but had plenty of peanuts in the pantry!)
I knew that the blades would cut peanuts because they were in the Lara Bars. But I wasn’t really sure about the texture. I like crunchy peanut butter and wasn’t sure how to get it crunchy.
I finally figured out to make the “base” first, then add a few more whole peanuts and just pulse the food processor a few times so they wouldn’t be pureed.
The result? Homemade peanut butter is good! Really good. The texture IS different than store bought, but it’s a good different in my opinion!
- 2 cups salted, roasted peanuts
- 1 tbs. sugar
- 2-3 tbs. water
- Put the peanuts and sugar in the food processor, reserving 3 tbs. peanuts if you'd like crunchy peanut butter. Process on high until smooth, drizzling in water until the desired consistency.
- Add in the reserved peanuts and pulse a few times to chop them, but not blend them completely. Remove peanut butter from food processor and stir.
