Anyone who has done a Whole30 or eats Paleo-style knows that easy recipes are ALWAYS welcome since tons of cooking is involved in these types of eating plans. I am always looking for recipes that are delicious but don’t take much prep time. Employing my crockpot is always a plus! (It’s my favorite kitchen appliance!) One night I just threw these ingredients together one day and ending up loving this paleo chicken recipe! Using only 4 ingredients is a huge plus, too!
What makes this dish so delicious? I’m loving coconut milk these days and this makes the chicken delicious, but I think the true winner in the recipe is garam masala. It’s a blend of spices used in Indian cooking and is my new favorite. Don’t let it intimidate you! If you don’t have an ethnic grocery store close by, you can order it here on Amazon (affiliate link). I’ve used it on fish, veggies (okra has been the best so far!), and eggs.
If you’re not eating Paleo, you can serve this dish over rice. If you are, serve it over cauliflower rice. (Here’s my recipe for cauliflower fried rice.) This paleo chicken recipe is one that you can throw together in the afternoon when you just don’t have time for lots of cooking.
- 2 pounds chicken breasts, cut into cubes
- 1 can coconut milk
- 1 tsp. salt
- 1 tsp. Garam masala seasoning
- basil, to garnish, optional
- Put all ingredients except basil in a crockpot and cook on low about 4 hours.
- Garnish with basil strips and serve.
