Guys, it’s C.O.L.D. in Houston! I know that low 30s isn’t that cold for some of you, but for those of us who are used to maybe wearing a light jacket through winter, it’s cold! (This is an updated post for 2014, but it WAS in the 20s and 30s this past weekend. Today? A mild 68!)
Anyway, nothing brings out my need for soup like cold weather, so I thought I would share some of favorite soup recipes that I’ve developed along the years of blogging.
First up, this one of my all-time favorites: Creamy Tomato Basil Soup. It’s no secret that I love basil- in fact, it’s one of the few things I can grow well in our garden! You can find the recipe here.
This one is probably my favorite- and even better- it’s super healthy. Crazy Healthy Pho is a healthy update to a classic Vietnamese favorite. The flavors get even better if it sits over night, so try to make it the day before if possible. Find it here.
Another favorite in our family- well for hubby and me since most of my kids won’t touch spicy food yet- is Creamy Jalapeno and Bacon Soup.
It is SO good and hello, bacon? It makes everything better! Find the recipe here.
My version of Zuppa Toscana is hole 30 approved! An Olive Garden favorite of my husband’s for years, I as so glad hen I developed a recipe e both truly love to make it at home. Find it here.
If you’re really trying to cut calories, this Curried Indian Chicken soup is perfect for a cold day when you’re craving comfort food but don’t want to blow your diet. Find it here.
I also love this recipe for Thai Shrimp Soup. I don’t have a picture of it (it was from my earrrrrly days of blogging) so I need to remedy that soon! Don’t let the picture-lessness deter you though, it’s still delicious! You can find it here.
Another Paleo/whole 30 favorite is Creamy Curried Cauliflower Soup. I have come to love cauliflower during my times of eating whole 30 and this soup is just spot on in flavor, creaminess and healthiness. Find it here.
And last but not least, this super-easy Sausage and Potato Soup. When I say easy, it takes less than 15 minutes to get together! Click here for the recipe, and even better, it’s on a hand printable you can stick on your fridge!
Please be safe! I know that the weather is bad all around the country.
