Carmelized Bananas with Ice Cream

A while back, while perusing my Better Homes and Gardens magazine, I saw a super-simple recipe for  a delicious-looking dessert. Amazingly, I remembered to get all the ingredients for the dessert at the grocery store- without a list. Apparently, I wanted this! 🙂 (I’ll blame it on the baby!)
This is a great “company” dessert that literally takes about 10 minutes, and any level of cook can make it. (I served it at our family Sabbath meal- you can read about that here.)
Oh, and PS, I am not a huge banana fan. But homemade caramel can make anything better!

  • Put about 3 tablespoons (real) butter and 1/4 cup brown sugar into a skillet and heat until bubbling. 
  • Add 2 bananas cut into 1/2 lengthwise, then in 1/2 again. 
  • Cook until the sugar/butter mixture becomes caramel-y and the bananas start to brown and soften a bit.
  • Serve bananas over vanilla ice cream (Blue Bell if you live in the South!) and sprinkle with chopped nuts if you like. 
  • Spoon extra caramel from the pan over the ice cream and serve immediately.
