I was also able to enjoy some delicious gingerbread hot cocoa that a good friend made. Today, I had the inspiration to make gingerbread granola. I don’t know why, I have never made homemade granola in my life, but it just sounded good! Maybe it was the vanilla ice cream topped with crumbled gingerbread cookies my hubby and I ate last night.
If you’re looking for a super-healthy granola, stop reading now! But if you’re looking for a delicious topping for yogurt or ice-cream, or just a snack to eat by the handful, read on!
Actually, the “granola” part is pretty healthy, it’s just the addition of gingerbread cookie dough that makes it more of a dessert that breakfast food. The cookie recipe I used, though, uses much less sugar than most cookie recipes- and it makes a LOT Of cookies!
I browsed the internet for a granola recipe I liked, then just kind of came up with my own. {It also had to have ingredients I had at home, since I wanted to make it right. now. 🙂 }This is what I used:
3 cups old-fashioned oats
1/2 cup chopped almonds
1/2 stick butter
1/4 cup agave nectar (or honey)
1 tsp. vanilla
One cup of raw gingerbread cookie dough
Boil butter, agave nectar, and vanilla for about one minute. Pour over oats and almonds in a large (at least 9×13) baking dish. Bake for 15 minutes at 275. After the first 15 minutes, crumble in one cup of this cookie dough. Continue cooking for 45 more minutes, stirring every 15. Enjoy!

Girl it is not being a super mom- it is buying a pre-made house at Wal-Mart and decorating it with leftover Halloween candy. 🙂 It really is fun!
