Crazy Easy Stacked Enchiladas

I love coming home to a crock pot meal Sundays after  church, and until recently I had completely forgotten about this particular recipe for stacked enchiladas. I used to make it often in our early (very poor!) married days when we lived off venison. This was a super cheap way to have a good, filling meal.

See? So easy! You can serve with Mexican rice, beans, tortilla chips and salsa. I used this recipe for rice yesterday, and it was really good! (I didn’t have any tomato sauce on hand so I used the leftover enchilada sauce from my can.)

Also, if you don’t have any enchilada sauce on hand, you can mix the cream of chicken soup with salsa instead. I don’t like it quite as much, but it’s still tasty.

  15. Hi Ashley! I commented back through e-mail but wasn’t sure if it posted- anyway, it is a different texture than “rolled enchiladas.” However, they aren’t soggy, at least not to me. Hope you enjoy!
