Creamy Caliente Olive Cheese Dip

If there’s one thing about me you should know, it’s that I LOVE, LOVE a good dip. Anything I can slather on a chip or cracker (or a veggie in a pinch 😉 ) piques my interest. When my husband was watching March Madness like it was going out of style, I was making “game food” like it was going out of style. (Go here and here for 2 more recipes.) I decided that a new dip was in order. I do love queso but wanted to try my hand at something a little different.

Every southern cook has Ro*Tel in his or her kitchen, and I decided that I wanted something spicy (better to keep the kids away, my dear!) and creamy and just good. I came up with this: Creamy Caliente Olive Cheese Dip, and it did not disappoint. It will also be good for Memorial Day celebrations this weekend!

And as all game food should be, it’s simple to make! You can enjoy this olive cheese dip, even if you’re not watching a game!

Creamy Caliente Olive Cheese Dip

Ingredients
  • 2 bricks cream cheese, softened
  • 1 can black olives
  • 1 can Ro*Tel, drained (I used spicy)
  • ½ cup cheddar cheese, shredded
Instructions
  1. Preheat oven to 350.
  2. Put cream cheese, olives, and Ro*Tel in a food processor.
  3. Pulse until smooth and olives are chopped.
  4. Add in cheddar cheese.
  5. Bake at 350 until bubbly and starting to brown on top, about 20 minutes.
  6. Enjoy with crackers or chips.

  4. Um yes, this looks so flipping good. I’m a dip girl myself as well. I could make a meal out of some of my favorite dips, which is acceptable trust me. Besides most have the array of food groups in them! I love olives so this will be perfect! Love it.
