Food on the Cheap: Part 3- Making Broth

So, ahem, around 10 months ago, I began a mini-series on using a whole chicken to make 3 meals and….. here we are and I didn’t finish. Until now. 😉 (To see part one: Cooking the Chicken and Part 2: Meal #1)

Part 3 is actually not a meal, per-se (that will parts 4 and 5) but making broth from the bones. Making your own broth isn’t as hard as it sounds and it’s SO good and nutritious. Cooking your chicken in the crockpot will make a really rich broth and since these bones have already been cooked once, it won’t be quite as rich, but still very healthy!

Take the bones from the chicken you deboned in Part One (not 10 months later, hopefully!) and put them into a large stockpot. Cover with water by 4-5 inches. Add in an onion and 1 tsp salt. Other people add carrots/celery/herbs- so do that too if you like!

Bring to a boil and then turn down to a simmer. Simmer for 1-2 hours, checking periodically that there is still plenty of water. Strain the solids and then you can either use the broth right away or freeze it in freezer bags for later.
