Quick (& lightened up) Appetizers

One of my very favorite things in life is appetizers. I have a whole Pinterest board dedicated to them, and it’s not uncommon for me to order an appetizer or two as my meal at a restaurant. I don’t know what it is that makes them better than a main course!

One thing I don’t love about them is that they are usually calorie-laden. Think ooey-gooey cheesy, bready goodness. That’s okay occasionally, but it’s great to have healthier options as well. That’s where Old London Melba Toasts come in.

They provide a great bread alternative to your favorite appetizers- and make them quick and easy as well!

Old London Melba Toasts Whole Grain

Here are a few ideas for appetizers using Old London Melba toasts:

Spread with low-fat goat cheese; top melba toast with a pecan slice and drizzle with honey. (Makes me hungry thinking about it!)

Make a margherita appetizer: top melba toast with low-fat mozzarella, a tomato slice, and basil leaf. Broil for a minute or two to melt the cheese.

For a dairy-free appetizer, make a tappenade by whirling together black and green olives, a drizzle of olive oil, black pepper, and crushed red pepper in a food processor or blender. Spread on melba toasts.

I love that appetizers can be simple, yet delicious- and I love that Old London Melba Toasts can make them a little more guilt-free!
