Restaurant Meals- Fried Rice

Ummmm, I love Asian food! Spring rolls, pad Thai, Vietnamese sandwiches, pho….. I don’t think I’ve tasted anything Asian that I didn’t like. So, a couple of years back I started experimenting with making my own. Because it’s cheaper and all. {Although, you can get some pretty stinkin’ cheap Asian food in my city. And did I mention it’s goooood? At one of my favorite places- our family -2 adults and 2 children that eat “real” food”- can eat for about $12!}

One of my family’s fave dishes is fried rice. Sometimes I add meat- such as ground pork- but our favorite rendition uses peanuts! Yes, it is cheaper, and yes it is delish!
Here is the recipe. But here’s the deal. I don’t use a recipe. So this is a more-or-less, add a little of this, a little of that kind of deal. But pretty much anything you do with these ingredients will come out tasty. So let’s go!
*First, cook the rice. I have just started doing mine in the microwave! So easy. I usually do 3 cups rice, 4-5 cups water. Pop in the microwave for 20 minutes, done.
Ingredients:
*6 cups cooked rice {the 3 cups will double when cooked!}
*2-3 Tbs. sesame oil {This may be a little hard to find if you live in a smaller town, but use it if at all possible! It is a small thing that makes a huge difference flavor-wise!}
* 1 cup raw peanuts
* 2-4 Tbs. soy sauce {low sodium if you like}
* 1 tsp. garlic powder OR 2-3 cloves of fresh
*1/2 fish sauce, if you have it
* chopped green onions- optional
* shredded carrots- optional
*one egg
Put the oil in a large, hot skillet {or wok if you have one}- heat for about 1 minute. Add peanuts and let them get a little toasty-about 2 minutes. Then add the rice. Here is the important part- don’t stir for a minute or two. This will allow the rice to get crusty and goooood!
Stir the rice, then add the soy sauce, garlic, fish sauce, and veggies if you are using them. Let it all sit for another minute or two, then stir again. Cook for about 5 minutes until all is heated through. Add the egg and cook for about 2 minutes, until cooked through.
That’s it! You should try it tonight!
