My husband and I were recently talking about cooking and his favorite meals I make, etc. He told me there was only thing I made that he did not like (brave man, huh?) but I asked! He said he liked quiche, but not when it had spinach in it. He’d rather it be all eggs/bacon and/or sausage/cheesy instead of the healthy green stuff.
Well last week I made a pasta dish that included chard. I must put in a side note here- I had previously made a grocery list on my phone and Ben had to run by the store anyway, so I texted him my list without re-reading it. I forgot it contained such “exotic” ingredients as chard and orecchiette pasta. The trip to the store took no less than 7 texts and 2 phone calls between the two of us to accomplish getting all the ingredients, but he did good!
Anyway, I had never bought or tasted chard before, but it basically a green that has a much milder taste than spinach (in my opinion.) Ben kept saying how much he loved the dish, and even loved the chard. So I decided that I would make a quiche recipe using this new-found green and see if Ben liked it any better.
It was a win! I had to agree that the chard was much tastier in the quiche because it didn’t dominate over the other ingredients. I used turkey sausage instead of pork which definitely isn’t as tasty, but much lower in fat.
Here’s the recipe I made up on the fly:
Cut sausage into bite-sized pieces. Cook sausage in a skillet until almost done, then add chard. Stir around until chard is wilted. Whisk 5 eggs in a bowl, then add salt and pepper. Add in turkey/chard mixture and cheese. Stir until just combined. Pour into a 9-inch pie crust and bake at 375 degrees until eggs are set. It took about 35 minutes this morning.
If you wanted to make it super healthy, you could cut out the pie crust (which is what I do when I am cutting carbs) and use reduced-fat cheese.
