Thank you so, so much to everyone who prayed for my granny-in-law last week. We were able to have some sweet time with her (including my 6 year old son stroking her face and singing her to sleep- be still my heart!) and Ben’s family. She went into the arms of Jesus this Monday. We are heading to the funeral visitation tonight and the funeral is tomorrow. Another prayer request- my husband is doing the funeral. Please pray for him- I am sure it will not be easy preaching the service of his last living grandparent.

This recipe is one very dear to my heart, as it was handwritten for me by a dear friend.
Anzac Biscuits
1 cup rolled oats
1 cup plain flour
1/2 cup sugar
3/4 cup desiccated (unsweetened) coconut
2 Tbs. golden syrup (I used Karo)
1/2 cup butter
1/2 Tsp. boiling water
pinch of salt
1/2 tsp. bicarbonate of soda (baking soda)
1. Mix oats, flour, sugar, and coconut together.
2. Melt syrup and butter together.
3. Mix soda with boiling water and add to melted butter and syrup.
4. Add liquids to dry ingredients.
5. Place spoonfuls of mixture on greased cookie sheet.
6. Bake in slow oven for 20 minutes- 150-160 degrees celsius,
or 302-320F (I do 320F)
Enjoy! They are so crunchy, tasty and different from American cookies.
